Pictures are finally up!

Ever since we moved into our little apartment, I've wanted to hang pictures on the walls. The walls were so white and boring! Even though we didn't have a big budget for decorating, we could at least put up a few pictures from our wedding and engagement. Well, after printing pictures and buying frames, we finally did it! I love it! Our house feels much more like a home now. Check it out!

NC + VA = LOVE

The beautiful graduate!

Kosorok Family

Biggs Family

This last week, Matt and I went back to the east coast to visit for Jeanette's (Jessica's sister) graduation from high school. We had such a great time! It was really fun because Matt's family came down to visit as well. We are so lucky that our parents and siblings are such good friends! Our families even hang out without us! A while ago, Matt's family went down to visit Tennessee and stayed with my family for a day and had a lot of fun. We're just glad we don't have to force our families together...they get together without us!

Jeanette and Jessica's diplomas!

Right after we got outside of the airport, Matt breathed in the humidity and he was home. He misses the humidity and trees and everything about the east coast. I miss everything but the humidity. So, Matt and I were supposed to surprise Jeanette. We hadn't told her we were coming out, but I guess she had asked my parents enough (and they couldn't tell a lie to win a million dollars) that she knew we would be there. My dad even said our names aloud when Jeanette asked who would be at the dinner on Friday night. I am glad my parents aren't deceptive, but we had a good time laughing about their inability to trick Jeanette. Jeanette was still excited we were there, so that was all that mattered. My grandmas were also visiting and they both love Matt's family, especially his brothers, so we all had a great time together.

We had a lot of fun bumming around Chapel Hill. We played bocce ball in the yard, went swimming at the neighborhood pool, cooked our favorite foods, hung around with friends, and went shopping at the mall and at the best store ever, A Southern Season. Matt's brothers picked out Jeanette's graduation present from the Biggs family--a pair of nerf guns. We had a blast. We turned the front hall and dining room table into a shooting range. We also shot all the bullets onto the glass door to the office. Then we perfected our sniper shooting by getting people on the head or the bum. It was hilarious! Our favorite part of the trip, of course, was seeing our families. It was so fun to just sit around talking and joking. It was amazing to see how everyone was growing up and how well everyone got along. We played classic family games and watched youtube videos. It was the best. We'll definitely miss our families a ton. Fortunately, our families are so close to each other, so we'll be able to see them all soon.

Friends and "Fat Boys"

A few weeks ago, one of our best friends, Sydnee Bowler got her mission call. Czech Republic! How awesome is that? Anyway, we had to invite her over to our little apartment: 1) because she was going home to Colorado for the rest of the summer and 2) she had never had dinner with us at our place. So, we decided to make Fat Boys. I realize the name sounds horrible, but it was a classic lunch for Matt when he went to a community college in Virginia and we wanted to see if we could make them! Basically, Fat Boys are rolls of dough with cheese and toppings inside. We also put some olive oil and Italian spices on the top to get it crispy. Then, you dip the sliced up Fat Boy in marinara sauce. DELICIOUS.

Here is the recipe:
1 cup of warm water
2 1/2 cups of flour
2 tsp. (or one packet) yeast
1 pinch of sugar
1/4 tsp. salt

***Matt makes the dough in our house and he doesn't really follow recipes. So...the measurements are approximate. You may need to add a little more flour or water to get it to the right consistency. Matt says the dough should be pretty soft. Play with a little bit to get it right if you need to.

Directions:
Preheat oven to 400. Mix warm water and yeast (and the pinch of sugar--this helps the yeast rise faster). Let it sit five minutes. Add flour and salt. Knead for three to five minutes. Let rise in a warm place until it is doubled in size. Roll flat and separate into rectangles (they should be longer than they are wide). Then fill the middle of the dough with cheese and desired toppings. Roll the dough and pinch the sides together to seal the roll. Brush the top of the roll with olive oil and seasonings. Slit the top of the roll a few times to let out steam while it is cooking. Place in oven for 11 minutes (or until brown and crispy on the outside). When they are out of the oven, slice them up and dip them in sauce. Enjoy!
